Tastefully Toasted

If I were a superhero, marshmallows would be my kryptonite, I’m only allowed to buy them on special occasions, so I made one up. Resisted eating the whole bag while making the syrup. Pat on the back. The activated charcoal is what gives the drink its color and adds a little smoky undertone alongside the chili bitters.

Serves 1 · Whiskey

Ingredients

Cocktail

1.5 oz Maker's Mark Bourbon
0.5 oz Ferino Cannella Cinnamon Cordial
0.5 oz toasted marshmallow syrup (below)
3 dashes Hella Smoked Chili Bitters
Squeeze of orange
1 capsule activated charcoal, broken open
1 egg white

Syrup

1 cup cane sugar
1 cup water
4 jumbo marshmallows, lightly toasted

Method

Toast and Simmer

Bring the water and sugar to a boil. While that's heating, toast the marshmallows over a stove burner or fireplace, you want roasted, not incinerated. Turn the heat to a simmer, drop the marshmallows in, and stir. This one needs babysitting, most syrups you can leave alone, but this one wants attention or it'll stick. Let it thicken slightly, then strain into a bottle to catch the burnt bits. Makes about 1 cup syrup. Keeps in the fridge for a couple weeks.
Shake, Froth, Rock n' Roll

Shake everything except the egg white with ice. For the froth, you've got two options: add the egg white to the shaker and shake until your arm gives out, or pour the drink into a container and use an immersion blender. I always go with the blender, it's faster and the froth holds better. Pour into a glass, top with a toasted mini marshmallow, and eat the rest of the bag like I did.
