Hello Spring, Meet Belleza Verde

I don’t have many favorites, but avocados make the short list. The texture and fresh flavor felt right for a spring drink, and it turns out everyone agrees — this one’s been the consistent winner whenever I’ve poured it for guests. Credit goes to the ‘cados.

Belleza Verde

Serves 1 · Tequila

Ingredients

Cocktail

1.5 oz Reposado Tequila
1.5 oz avocado purée (below)
0.5 oz lime juice
0.5 oz Cointreau
0.5 oz jalapeño-infused agave syrup (below)
Cucumber soda, to top

Syrup

Agave syrup
1 sliced jalapeño

Purée

1 ripe avocado
Juice of 1–2 limes
Splash of water

Method

Infuse the Syrup

Two ways to go, depending on your timeline: Fast: Heat the agave with ¼ cup water and simmer with the sliced jalapeños for 15 minutes. Strain into a bottle. Slow: Drop the sliced jalapeños straight into your agave bottle and let it sit for at least 24 hours before using.
Purée the Avocado

Blend until smooth. You can skip this step and toss a spoonful of avocado into the shaker with everything else, but you'll need to shake hard and you might still end up with chunks. The purée is worth the extra minute.
Shake and Pour

Shake all the cocktail ingredients (everything except the cucumber soda) with ice. Pour into your favorite glass and top with the soda. The candied jalapeños from the syrup make a great garnish, pull a few out and drop them in.
